"1) Presentation: Dessert tables offering several kinds of cakes,
or table cakes - smaller cakes of different flavors and designs
that serve as centerpieces for guests' tables - are trendier
than having one large cake."

"2) Style: The heavily embellished traditional cake with swags and
sugar flowers has been replaced by cakes that are more minimalist
and stylized. Cakes covered in rolled fondant - which can be formed
into many shapes and gives a smooth, elegant, "wrapped" finish - are
in demand, especially the pearlized fondant. For wedding cakes, pil-
lars and tier separators are passe; stacked cakes are in. Combining
square and round layers is particularly chic, as are offset tiers
placed to the corner or one side, not centered on the tier below.
Petal and hexagon shapes are trendy, too. Present cakes - square
layers with fondant ribbon and bows - are hugely popular."

"3) Color: Vivid colors are one of the biggest trends in special
-occasion cakes - even in wedding cakes. Each layer of the cake
may be a different color, or several colors may be combined in
the cake's decor. Trendy colors include turquoise, lime green,
fuchsia, tangerine and sky blue."

"4) Flavors: Italian cream, amaretto, orange marmalade, pina colada
and Kahlua/chocolate are hot flavors. And "there's no reason to
stick with one flavor throughout the entire cake," says Mary Jane
Moreau of 'Petit Fours." "The bottom might be chocolate, the middle
vanilla and the top passion fruit."

"Texas Star Bakery." She says the Cars movie is still big, but
"with Shrek the Third, we're anticipating we're going green."
